Brooklyn Kolache is a scratchmade bakery specializing in small-batch Texas style kolaches; hand filled and baked fresh daily. We use all natural, often organic, and locally sourced ingredients. Our fillings are handmade without the use of preservatives or artificial sweeteners. Our dough is made with King Arthur flour, local cage-free eggs and fresh Battenkill Valley milk. In addition to kolaches we make cinnamon rolls, orange rolls and vegan/gluten-free energy cookies.
We offer a full espresso and coffee menu featuring Brooklyn roaster, Kitten Coffee, a wide selection of Harney & Sons tea and house-made syrups including ube, chai, salted caramel and ganache.
Our commitment to you and future generations.

"Brooklyn Kolache takes an artisanal tack, selling fruit-filled kolaches like apricot, as well as savory ones stuffed with bacon-wrapped hot dogs of Mexican-American derivation."
“Not content to merely reproduce the Tex-Czech pastry, she’s innovated, and her kolaches are bigger and more opulent than their humbler Texas cousins.”
"Purists will insist that the yeast-raised buns be filled only with sweetened fruit or cheese, but in Texas, savory versions with sausage, eggs, chiles and the like are wildly popular. "
Martha Stewart
“Bite by bite she shares a Texas tradition and a warm, filling taste of home.”
"...the dough itself is the main event. Slightly sweet, it compliments both a sweet and savory middle, and the ratio of dough to filling — heavy on the dough, light on the filling — leaves no confusion as to who’s boss."
"...everything here is made from scratch, including the yeast dough and the jams that fill it. Most items are sourced from farms in New York and Vermont, with the exception of one preferred sausage maker in Texas—fitting because kolaches are, as they say, big in Texas."
"Greenwich Village has a new bakery that specializes in kolaches stuffed with everything from strawberry rhubarb jam to bacon, egg, and cheese."
"Being the only Kolache bakery in Manhattan, this bakery is truly one of its kind... If you want to expand your horizons (and your palette), Brooklyn Kolache is the new place to be."

"They come for excellent versions of classic flavors like poppyseed, cherry sweet cheese, and jalapeño sausage cheddar, with the smoked sausage—both Texas beef and garlic pork—coming from Meyer’s in Elgin"
